INGREDIENTS

  • 100gram(s)Acai, frozen puree, zero sugar (1 packet= 100 g)
  • 2Tbsp (2 T = 1 oz)Cashews, whole, roasted.
  • 8largeStrawberries, fresh, whole
  • 1 1/3cupGreek Yogurt, plain, unsweetened, whole milk
  • 1teaspoon(s)Lakanto monkfruit sweetener with erythritol (1 tsp= 4g)

DIRECTIONS

  1. In a medium saucepan over medium heat, warm the acai puree and ½ teaspoon sweetener to steaming, reducing heat if needed to prevent a boil. Heat for 5 minutes to reduce and thicken. Remove from heat and cool in the refrigerator for 30 minutes.
  2. While the acai is cooling, in a small bowl toss sliced strawberries with remaining sweetener and set aside.
  3. Assemble the parfait. Using two 8-ounce jars or glasses, layer 1/3 cup yogurt on the bottom, topped with 1 tablespoon acai puree, and ¼ of the strawberries (1.25-ounces). Repeat layers in each glass, and top each parfait with ½-ounce cashews.
