INGREDIENTS
- 1envelopeGelatin, unsweetened
- 2tablespoonTap Water
- 1 1/2cupHeavy Cream, liquid
- 1eachAtkins Café Caramel Shake
- 3tablespoonConfectioners (powdered) erythritol
- 5dropLiquid Stevia Drops
- 1tspVanilla Extract
DIRECTIONS
Ingredient note: We recommend using English Toffee flavored liquid stevia drops for this recipe.- In a cup, sprinkle the gelatin onto the water and set aside.
- In a small saucepan, whisk together the cream, shake, sweeteners and vanilla. Warm over medium heat, stirring occasionally, until just starting to simmer, about 10 minutes.
- Remove from heat, and whisk in the gelatin until dissolved. Fill 6 ramekins with ½ cup of the liquid, cover with plastic wrap, and refrigerate for at least 3 hours or until the gelatin is set. OPTONAL: serve with a dollop of whipped cream (1 tablespoon adds .021 net carbs), or a teaspoon of sugar free caramel syrup (does not add net carbs).
