INGREDIENTS

  • 1head, large (6-7" dia)Green Cauliflower
  • 1smallRed Onions
  • 6largeEgg (Whole)
  • 0 1/2cupMatzo Meal
  • 1 1/2tspSalt
  • 0 1/2tspBlack Pepper
  • 1cupCooked Green Peas (from Frozen)

DIRECTIONS

  1. In a food processor, finely chop cauliflower and onions together. Stir in eggs, matzo meal, salt, pepper and peas. Pulse to combine.
  2. Heat an ungreased nonstick griddle over medium heat. For each pancake, scoop out ¼ cup batter and flatten with a spatula to a 3 diameter. Cook pancakes 1 to 2 minutes per side, until golden brown
