INGREDIENTS

  • 1 1/2lbGround Beef (80% Lean / 20% Fat)
  • 1cupDiced Tomatoes
  • 1cupMung Beans (Mature Seeds, Sprouted)
  • 1largeEgg (Whole)
  • 1mediumCarrots
  • 2tbspWorcestershire Sauce
  • 1 1/2tspSalt
  • 4tbspUnsweetened Ketchup
  • 0 3/4tspBlack Pepper
  • 3Atkins Low Carb Wheat Bread

DIRECTIONS

Use the Atkins recipe to make Atkins Low Carb Wheat Bread, you will need 3 slices - toasted.
 
  1. Heat oven to 375°F. Place toast in a food processor to make fine crumbs; transfer to a large bowl. Add ground meat, tomatoes, beans, egg, diced carrot, Worcestershire sauce, salt and pepper; mix gently until just blended.
  2. Spoon into 5- by 9-inch loaf pan, pressing firmly. Spread ketchup over top. Bake 60 to 70 minutes, until cooked through.
  3. Transfer to a platter, discarding any fat left in pan. Let stand at least 10 minutes before slicing.
