INGREDIENTS

  • 1eachCucumber, medium
  • 0 1/4mediumRed Onions
  • 1large whole (3" dia)Red Tomatoes
  • 2ozPitted Kalamata Olives
  • 0 1/4cup, crumbledFeta Cheese
  • 4tbspPeppermint (Mint)
  • 6tablespoonExtra Virgin Olive Oil
  • 2tbspWhite Wine Vinegar
  • 1teaspoonSucralose Based Sweetener (Sugar Substitute)

DIRECTIONS

  1. Evenly dice the cucumbers, onions and tomatoes.  Slice the olives and combine them with the vegetables in a large bowl. Set aside.
  2. Combine the feta cheese, julienned mint, olive oil, vinegar and sugar substitute in a blender and blend until thoroughly combined. If the dressing is too thick add a little water till desired consistency. Season dressing with salt and freshly ground black pepper.
  3. Arrange salad on 4 serving plates and pour dressing on top. Serve immediately
