INGREDIENTS

  • 2cucumber (8-1/4")Cucumber (with Peel)
  • 3tbspRed Wine Vinegar
  • 1tbspSucralose Based Sweetener (Sugar Substitute)
  • 0 1/2tspSalt
  • 4medium (4-1/8" long)Scallions or Spring Onions
  • 2medium whole (2-3/5" dia)Red Tomatoes
  • 4tbspPeppermint (Mint)
  • 2tablespoonExtra Virgin Olive Oil

DIRECTIONS

  1. In a large bowl combine diced cucumber, vinegar, sugar substitute and salt. Marinate for 30 minutes.
  2. Add diced tomatoes, chopped green onions, julienned mint and olive oil. Gently mix to combine and season to taste with additional salt and pepper.
