Cucumber, Tomato and Green Onion Salad Recipe

INGREDIENTS
- 2cucumber (8-1/4")Cucumber (with Peel)
- 3tbspRed Wine Vinegar
- 1tbspSucralose Based Sweetener (Sugar Substitute)
- 0 1/2tspSalt
- 4medium (4-1/8" long)Scallions or Spring Onions
- 2medium whole (2-3/5" dia)Red Tomatoes
- 4tbspPeppermint (Mint)
- 2tablespoonExtra Virgin Olive Oil
DIRECTIONS
- In a large bowl combine diced cucumber, vinegar, sugar substitute and salt. Marinate for 30 minutes.
- Add diced tomatoes, chopped green onions, julienned mint and olive oil. Gently mix to combine and season to taste with additional salt and pepper.
