INGREDIENTS
- 1cupStrawberries, fresh, sliced
- 1 1/2teaspoonConfectioners (powdered) erythritol
- 1barAtkins Birthday Cake Bar
- 0 1/2cupHeavy Cream, liquid
- 1tspVanilla Extract
DIRECTIONS
- In a small bowl sprinkle ½ teaspoon powdered erythritol (or to taste) over the sliced strawberries and set aside.
- Finely chop the Atkins Birthday Cake Bar and set aside.
- In a medium bowl, use a hand mixer to whip the cream with the vanilla and 1 teaspoon powdered erythritol until light and fluffy.
- In each of two small glasses or 8-ounce jelly jars, layer 1/6 of the strawberries (about 28 g), 1/6 of the bar (about 8 g), and ¼ of the whipped cream (about 1 ounce). Repeat the layers, then top with remaining strawberries and bar. Eat immediately, or refrigerate for up to 1 day.
