INGREDIENTS

  • 14ozFirm Silken Tofu
  • 2stalk, medium (7-1/2" - 8" long)Celery
  • 0 1/8cup, choppedYoung Green Onions
  • 1mediumPickles
  • 2cloveGarlic
  • 4tbspParsley
  • 8tbspOriginal Vegenaise
  • 4teaspoonDijon Mustard
  • 0 1/8tspTurmeric (Ground)
  • 1tspSalt

DIRECTIONS

  1. Dice the tofu, celery, onions and pickles.  Add all to a medium bowl along with the minced garlic and parsley.  
  2. In a small blow blend to together the Vegenaise, Dijon mustard, turmeric and salt then add it to the tofu mixture.  Toss until completely coated with dressing. 
  3. Enjoy as you would egg salad by adding to Romaine lettuce leaves and rolling up or to a low-carb tortilla.

Cooking Tip

Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
