Eggs Scrambled with Avocado, Onions and Tomato Recipe

- 2tbsp choppedOnions
- 0 1/2fruit without skin and seedsCalifornia Avocados
- 1small whole (2-2/5" dia)Red Tomatoes
- 1tspExtra Virgin Olive Oil
- 2largeEgg (Whole)
DIRECTIONS
- Heat oil in a nonstick skillet over medium-high heat. Dice onions, avocado and tomatoes then set aside.
- Sauté white onions in skillet until translucent.
- Add eggs, avocado and tomatoes and scramble together until eggs are set.
- Season to taste with salt and freshly ground black pepper and serve immediately.
