INGREDIENTS
- 2cupBaby Spinach
- 1tbspCanola Vegetable Oil
- 2largeEgg (Whole)
- 0 1/2ozFeta Cheese
DIRECTIONS
- In a small non-stick skillet, wilt spinach with 1 tablespoon of water over medium heat. Once all the water has evaporated and the spinach has wilted add 1 tablespoon of oil to the skillet and toss with the spinach to coat the pan.
- Add lightly beaten eggs and cheese and cook until set.
- Season with salt and freshly ground black pepper and serve immediately.
