Eggs with Cheddar, Asparagus, Salsa and Sour Cream Recipe

- 1tbspSour Cream (Cultured)
- 11tspOlive Oil
- 4spear, medium (5-1/4" to 7" long)Asparagus
- 2largeEgg (Whole)
- 0 1/4cup, shreddedCheddar Cheese

DIRECTIONS
Use the Atkins recipe to make Salsa Cruda or use 2 tablespoons of a no-sugar-added salsa of your choice.
- Steam asparagus in skillet for 3 minutes with 2 Tbsp water. Drain and chop.
- Beat eggs and add to skillet with 1 tsp oil over medium heat. Add asparagus and cheddar and scramble with eggs till set.
- Top with salsa and sour cream. Alternatively, scramble the eggs with the cheddar, sour cream and salsa then top with full stalks of asparagus for a festive occasion.
