  • 2tablespoonEXTRA VIRGIN OLIVE OIL Salov North America Corp.
  • 1tbspPARSLEY Adams Extract Co.
  • 0 1/2tspSALT Morton Salt, Inc.
  • 0 1/2tspLemon Zest
  • 0 1/4tspBLACK PEPPER Finlay Extracts & Ingredients USA, Inc.
  • 3tbspBASIL Casa Imports Inc.
  • 1mediumSummer squash
  • 0 1/16fl ozFresh Lemon Juice

DIRECTIONS

  1. Prepare a medium grill or heat broiler. Chop parsley and basil.  In a large bowl, combine zucchini, yellow squash, oil, salt and pepper. Toss to coat.
  2. Grill squash (in batches, if necessary) 2 to 3 minutes per side until lightly charred and just tender. Transfer to a large bowl and toss with basil, parsley, lemon juice and lemon zest.
