INGREDIENTS

  • 28ozPalm Hearts
  • 2tablespoonExtra Virgin Olive Oil
  • 0 1/2tspGarlic
  • 0 1/2tsp, leavesOregano
  • 0 1/4tspSalt
  • 0 1/4tspBlack Pepper
  • 2cup cherry tomatoesRed Tomatoes
  • 5leaf smallButterhead Lettuce (Includes Boston and Bibb Types)
  • 6eachBlack Olives

DIRECTIONS

  1. In a large bowl toss hearts of palm slices, oil, minced garlic, oregano, salt, and pepper. Marinate 20 minutes for flavors to blend.
  2. Cut cherry tomatoes in half. To serve, spread out lettuce on a serving platter. For each hors d'oeuvre, skewer one heart of palm piece and one tomato half on a toothpick. Arrange on platter; scatter olive halves over all.
  3. Each serving is about 2 pieces each.
