INGREDIENTS

  • 2cupCoconut Milk Beverage, plain, unsweetened
  • 2tablespoonConfectioners (powdered) erythritol
  • 0 1/4tspCinnamon, ground
  • 2tablespoon (2.7 g=1 tbsp)Coffee, instant powder, dry
  • 3tablespoonHot Water

DIRECTIONS

  1. In a large bowl, dissolve the powdered erythritol in hot water. Add the instant coffee and cinnamon and combine with a hand mixer on medium high speed until lightened in color and stiff peaks form, up to 5 minutes.
  2. To serve, fill a glass with 1 cup of unsweetened milk alternative, and dollop of ½ cup of the foam. You can sip it as is, or mix the coffee foam into the milk. The foam will keep in the refrigerator for up to 2 days. If it seperates, you can quickly whip it back into stiff peaks.

Note: you can make this using a stand mixer, or even by hand with a balloon whisk (although whipping by hand will take much longer).
