INGREDIENTS

  • 1tbsp choppedChives
  • 6tbspReal Mayonnaise
  • 0 1/2eachChipotle en Adobo, whole
  • 0 1/8tspSalt
  • 1medium whole (2-3/5" dia)Red Tomatoes
  • 6ozTuna in Water (Canned)
  • 3tbspReal Bacon Bits
  • 0 1/2fl ozFresh Lemon Juice

DIRECTIONS

  1. Cut the tomato in half and scoop out seeds and pulp. Drizzle with a little olive oil and sprinkle salt and pepper (optional). 
  2. Finely dice the chipotle pepper and add it along with the remaining ingredients (be sure to drain the tuna first) to a small bowl. Blend to combine and then fill tomato halves with the tuna mixture and serve.

Cooking Tip

Sprinkle with smoked paprika before serving to add an additional pop of color and smokey flavor to this naturally keto and low carb recipe!
