Macaroni and Cauliflower Salad Recipe

INGREDIENTS
- 2ozBrown Rice Pasta, dry
- 2cupCauliflower
- 0 1/2cupReal Mayonnaise
- 0 1/2tspGarlic
- 3teaspoonDijon Mustard
- 2teaspoonSucralose Based Sweetener (Sugar Substitute)
- 0 1/3cup choppedCelery
- 0 1/4cup, choppedSweet Red Peppers
- 0 1/4cucumber (8-1/4")Cucumber (with Peel)
DIRECTIONS
- Prepare pasta according to package directions. During the last 8 minutes of cooking time, add cauliflower florets. When pasta and cauliflower are tender, drain into a colander and rinse under cold water.
- In a large serving bowl, mix mayonnaise, minced garlic, mustard and sugar substitute. Dice the celery, red pepper and cucumber. Add to the bowl and fold in pasta and cauliflower. Mix gently until all ingredients are combined.
- Season to taste with salt and pepper. Serve immediately.
