Mashed Autumn Vegetables with Bacon and Scallions Recipe

INGREDIENTS
- 1 1/2lbTurnips
- 0 1/8tspCinnamon
- 2small (3" long)Scallions or Spring Onions
- 0 1/8tspSalt
- 4medium slice (yield after cooking)Bacon
- 3sweetpotato, 5" longSweetpotato, fresh
- 1tablespoonUnsalted Butter Stick
- 0 1/4tspBlack Pepper
DIRECTIONS
- Put turnips and sweet potatoes in a large saucepan fitted with steamer basket with just enough water to clear the bottom of the basket. Cover and bring to a boil over high heat. Reduce heat to medium-low and steam vegetables until very tender, 10-12 minutes.
- Meanwhile, cook bacon in a medium skillet over medium heat until crisp. Drain on paper towels and coarsely crumble. Reserve drippings.
- Drain vegetables and return to saucepan. Beat with an electric mixer or mash with a potato masher until fairly smooth. Add butter and bacon drippings. Stir in cinnamon, salt and pepper.
- Spoon into a serving dish and top with diced scallions and crumbled bacon.
