INGREDIENTS

  • 0 1/4cupReal Mayonnaise
  • 6largeBoiled Egg
  • 1ozBlack Olives
  • 1Tbsp choppedSun-Dried Tomatoes
  • 0 1/8tspCrushed Red Pepper Flakes
  • 4tortillaLow Carb Tortillas
  • 1cupArugula (Rocket)
  • 2tablespoonExtra Virgin Olive Oil

DIRECTIONS

  1. Mix eggs, mayonnaise, olive oil, black olives, sun-dried tomatoes and 1/8 tsp red-pepper flakes. Season to taste with salt and pepper.
  2. Warm tortillas between damp paper towels in microwave. Spread egg mixture on tortillas, leaving a border. Top with 1 cup arugula leaves.
  3. Roll up tortillas. Enjoy!
