Pancetta-Flavored Braised Cabbage Recipe

INGREDIENTS
- 1 1/2ozPancetta
- 0 1/2cup, choppedOnions
- 0 1/2cup, slicedFennel Bulk
- 4cup, choppedCabbage
- 1tbspLight Olive Oil
- 0 1/4cupChicken Broth, Bouillon or Consomme
- 0 1/4tspSalt
- 0 1/4tspCrushed Red Pepper Flakes
- 0 1/3tbspWhite Wine Vinegar
DIRECTIONS
- In a large skillet over medium-high heat, cook pancetta 3 to 4 minutes, until browned and crisp. Transfer to a plate and when cool cut into small pieces; set aside.
- Slice the onion, fennel and core and slice the cabbage; set aside. Add oil to the skillet over medium-high heat. Add the onion and fennel cooking for 3 minutes, until lightly browned. Add sliced cabbage, broth, salt and crushed red pepper.
- Reduce heat to medium; cover and cook until tender, 18 to 20 minutes.
- Stir in vinegar and pancetta. Serve immediately.
