INGREDIENTS

  • 1 1/2ozPancetta
  • 0 1/2cup, choppedOnions
  • 0 1/2cup, slicedFennel Bulk
  • 4cup, choppedCabbage
  • 1tbspLight Olive Oil
  • 0 1/4cupChicken Broth, Bouillon or Consomme
  • 0 1/4tspSalt
  • 0 1/4tspCrushed Red Pepper Flakes
  • 0 1/3tbspWhite Wine Vinegar

DIRECTIONS

  1. In a large skillet over medium-high heat, cook pancetta 3 to 4 minutes, until browned and crisp. Transfer to a plate and when cool cut into small pieces; set aside.
  2. Slice the onion, fennel and core and slice the cabbage; set aside.  Add oil to the skillet over medium-high heat.  Add the onion and fennel cooking for 3 minutes, until lightly browned. Add sliced cabbage, broth, salt and crushed red pepper.
  3. Reduce heat to medium; cover and cook until tender, 18 to 20 minutes.
  4. Stir in vinegar and pancetta.  Serve immediately.
