  • 0 1/8tspRed or Cayenne Pepper
  • 2ozPimento (Canned)
  • 0 1/3cupREAL MAYONNAISE Unilever Bestfoods North America
  • 0 1/4tspSALT Morton Salt, Inc.
  • 0 1/2tspDIJON MUSTARD Whole Foods Market, Inc.
  • 4ozSHARP CHEDDAR CHEESE ANCO Fine Cheese a Division of Schratter Foods, Inc.
  • 1tsp smokedPAPRIKA Mojave Foods Corporation
  • 4ozVintage White Extra Sharp Cheddar Cheese

DIRECTIONS

  1. Shred cheeses and set aside.
  2. Combine mayonnaise, diced pimento, smoked paprika, Dijon mustard, salt, and cayenne pepper (to your taste) in a small bowl.  Stir with a fork to blend flavors.
  3. Add the cheeses to the mayonnaise mixture stirring to fully incorporate.  Wrap and chill for 2-3 hours before serving for best flavor.  May be kept tightly covered in the refrigerator for 1 week.  Serve with celery sticks or other vegetables.  Each serving is about 2 Tbsp.
