INGREDIENTS

  • 1lbScallop (Mixed Species)
  • 0 3/4fl ozLime Juice
  • 1tbspWhite Wine Vinegar
  • 1pepperJalapeno Peppers
  • 1tspGarlic
  • 0 1/4tspSalt
  • 0 1/4tspBlack Pepper
  • 0 1/2fruit without skin and seedsCalifornia Avocados
  • 0 1/4cupExtra Virgin Olive Oil
  • 0 1/8cupCilantro (Coriander)

DIRECTIONS

  1. Bring water to a boil. Add scallops; immediately remove pot from heat and let stand 8 minutes.
  2. Remove scallops with a slotted spoon and place in a medium bowl. Combine scallops with lime juice, vinegar, finely diced jalapeno, minced garlic, salt and pepper. Toss gently and refrigerate 1 hour for flavors to blend.
  3. Just before serving, gently toss scallop mixture with avocado cubes, olive oil and cilantro.
