INGREDIENTS
- 0 1/4cupExtra Virgin Olive Oil
- 1medium (2-1/2" dia)Onions
- 2cloveGarlic
- 1cupDiced Tomatoes
- 2ozGreen Chili Peppers (Canned)
- 2lbSnapper (Fish) (Mixed Species)
- 2tbsp, drainedCapers
- 0 29/4810 largeStuffed Green Olives
- 0 1/8cupCilantro (Coriander)
DIRECTIONS
- Heat oven to 400°F. Heat oil in a large nonstick skillet over medium heat. Cook diced white onion 5 minutes, until softened.
- Add minced garlic and cook 1 minute more. Stir in tomatoes, diced chiles, and 1 tbsp cilantro. Cook 10 minutes, until mixture thickens slightly.
- Arrange snapper fillets in a 9 x 13 baking dish. Sprinkle with salt and pepper. Spoon sauce evenly over fish. Top with capers and 6 large olives, sliced. Cover with foil.
- Bake 20 minutes, just until fish is cooked through. Garnish with left over chopped cilantro (about 1 tbsp).

Add additional cilantro to this dish to make it pop with freshness!
