- 4large whole (3" dia)Tomatoes
- 2tbsp, drainedCapers
- 3tsp, leavesOregano
- 6ozGreen String Beans
- 24ozraw chicken breast, skinless, boneless USDA
- 2pepperJalapeno Peppers
- 1tbspLight Olive Oil
- 2tbspButter
DIRECTIONS
- Season chicken with salt and pepper. Heat oil in a large skillet over high heat and sauté chicken until golden brown, about 3 minutes per side.
- Add tomatoes, jalapenos and capers to skillet. Reduce heat to medium low; cover and simmer until chicken is just cooked through, about 8 minutes.
- Stir in fresh minced oregano just before serving.
