INGREDIENTS

  • 4large whole (3" dia)Tomatoes
  • 2tbsp, drainedCapers
  • 3tsp, leavesOregano
  • 6ozGreen String Beans
  • 24ozraw chicken breast, skinless, boneless USDA
  • 2pepperJalapeno Peppers
  • 1tbspLight Olive Oil
  • 2tbspButter

DIRECTIONS

  1. Season chicken with salt and pepper. Heat oil in a large skillet over high heat and sauté chicken until golden brown, about 3 minutes per side.
  2. Add tomatoes, jalapenos and capers to skillet. Reduce heat to medium low; cover and simmer until chicken is just cooked through, about 8 minutes.
  3. Stir in fresh minced oregano just before serving.
