Keto Spinach and Shrimp Dip Recipe

INGREDIENTS
- 1package (10 oz)Spinach (Chopped or Leaf, Frozen)
- 1medium (4-1/8" long)Scallions or Spring Onions
- 1cloveGarlic
- 2pepperJalapeno Peppers
- 0 1/2cupReal Mayonnaise
- 6tbspCream Cheese
- 0 1/2ozLemon Juice
- 0 1/4tspOld Bay Seasoning
- 4servingSmall Cooked Shrimp
DIRECTIONS
- Thaw spinach in the microwave for 1-2 minutes. Squeeze out excess water and place it into the bowl of a food processor. Coarsely chop the scallions, jalapeno and garlic and add to the food processor bowl. Process mixture until finely chopped.
- Add the mayonnaise, softened cream cheese, lemon juice and Old Bay seasoning. Pulse until fully combined.
- Add the shrimp and pulse just until the shrimp are finely chopped - about 10 seconds. Taste and adjust seasonings. Keep refrigerated until ready to serve. This recipe makes 2 cups. Serve with Cauliflower Fritters (see Atkins recipe) or with baked parmesan crisps or other low carb cracker.
