  • 1 1/2tspSalt
  • 0 1/2tspBlack Pepper
  • 16oz, boneless, cookedChicken Breast
  • 1mediumCarrots
  • 16tbspSodium and Sugar Free Rice Vinegar
  • 4cup, shreddedChinese Cabbage (Bok-Choy, Pak-Choi)
  • 0 1/4cupCilantro (Coriander)
  • 0 1/4cupDry Roasted Unsalted Peanuts
  • 2tbspToasted Sesame Oil
  • 4largeScallions or Spring Onions

DIRECTIONS

Please note that this recipe uses cooked chicken breast. You can buy a roaster chicken from the grocery store.

  1. In a large bowl, mix vinegar, oils, sugar substitute, salt and pepper.
  2. Add bok choy, chicken, carrot, green onion, cilantro and peanuts. Toss gently to combine.
